Apricot, Carrot and Ginger Bliss Balls.


What you will need:

1 cup almonds

1/4 cup fine grated carrot or carrot juice pulp

1 cup soaked and drained sulphur free organic apricots

1 cup desiccated coconut plus extra to roll

1 tsp grated fresh ginger

1/2 tsp ginger powder

1 tsp mesquite powder

How to make them:

  1. put all the ingredients into the food processor and blitz until the almonds have been broken up but not too smooth as the texture works well with the apricots.
  2. form into small balls or logs and roll in descicated coconut or almond meal.
  3. store in a jar in the fridge for 1 week or freeze in containers for 1 month.
