What you will need:
1 cup almonds
1/4 cup fine grated carrot or carrot juice pulp
1 cup soaked and drained sulphur free organic apricots
1 cup desiccated coconut plus extra to roll
1 tsp grated fresh ginger
1/2 tsp ginger powder
1 tsp mesquite powder
How to make them:
- put all the ingredients into the food processor and blitz until the almonds have been broken up but not too smooth as the texture works well with the apricots.
- form into small balls or logs and roll in descicated coconut or almond meal.
- store in a jar in the fridge for 1 week or freeze in containers for 1 month.
